A foggy morning breakfast
Yesterday morning I had a little extra time and decided to try out banana brulee oatmeal from Chocolate Covered Katie.
Now, when the recipes said “melt the banana” I paused for a minute thinking “huh, how do you melt a banana?” So I’m posting a pic of my melted banana just so you see what it looked like (even though it’s not pretty – tasty and pretty are not always one and the same). I just put the peeled the banana, put it on a plate and microwaved it for a minute and a half.

I smushed it up, put it on top of my oatmeal and added a glob of almond butter.
Cooking the banana first definitely adds some extra sweetness (there’s a reason why banana can be used as a sugar substitute in recipes), and it’s fun to come across a bite of sweet banana goo once it was mixed in with the rest of the oatmeal, although I did lose the flavor some once it was mixed in. This morning I just put a banana on top of my oatmeal and put the whole bowl in the microwave (two steps in one) and it produced similar results. I think I’ll have to try this again with plain oatmeal to see if I taste it more – this week I made a batch of steel cut oats with cinnamon, ginger, flax, vanilla soy, and chopped up apples, so there was already a flavor party in the bowl that the banana was trying to compete with. I also want to hold onto the idea for a dessert topping… I could see it doing good things with a bit of ice cream or even with some chocolate or toast.
